I've been asked many times by people from
all over the world, "How often do you eat Cajun Cookin'?" I
tell them, "Every Day that I'm Home!" While this may seem to be
a "cute" answer to their question, it is the absolute truth. Even when
my wife (who was raised in Chicago and spent many years living in Colorado
Springs and Atlanta) prepares our dinner, I have a hard time not sneaking in the
kitchen to "spice" up the dinner. Although Colene is a wonderful cook,
my taste buds are in need of that "cajun spice." I have always enjoyed
cooking, and when I have the urge to get into the kitchen I really enjoy it. These
